Salmon Spinach Pasta with Sweet barrel White Wine Sauce

You Will Need:

  • 1 tsp extra virgin olive oil
  • 1 cup red onion, chopped
  • 1 clove of garlic
  • salt & pepper to taste
  • 1/2 tomato, chopped
  • 2 cups spinach
  • 1 cup chopped broccoli
  • 1/2 cup Easley Sweet Barrel White Wine
  • 8 oz. salmon filet
  • 2 servings pasta ( I use Carba Nada)

In a large pan, heat olive oil over medium high heat. Add the red onion and garlic. Cook until translucent, but not brown. Add salt and pepper to taste. Once onions are translucent, add in spinach, tomato, and broccoli. Cook until the spinach is wilted, then add in the Easley’s Sweet Barrel White Wine. While vegetables are simmering in the wine, prepare the salmon in your favorite way. (I baked mine in the oven topped with salt and pepper at 400 degrees for about 8 minutes, or until cooked all the way through.) When the salmon is done, cut it into small bite sized pieces. Prepare the pasta according to the box directions. Cook off the wine for 5-8 minutes. Gently mix the salmon into the pasta and the vegetables. Divide into 3 servings and enjoy!
